Erin works as a Clinical Professor within Iowa State University's Dietetic Internship, which is a large nationwide internship. She leads the Champion Site initiative from the Academy of Nutrition and Dietetics Foundation, which integrates Sustainable, Resilient and Healthy Food and Water Systems curriculum into Iowa State University's Dietetic Internship (to transition to Future Graduate Program with combined master's and dietetic internship in August 2021). She coordinates the community nutrition rotation in Asesewa Ghana in partnership with the University of Ghana which travels each June and October. She also co-leads the combined internship and undergraduate course in Paris, France which travels each June.
